  • Caramel Sopapilla Cheesecake

    I made this for the vultures, I mean coworkers, at my work's Thanksgiving potluck.
    I used the pillsbury recipe but added a layer of homemade caramel under the top dough layer.
    I was on service calls so I didn't see the frenzy but judging by the dish remnants and witness reports, it went fast.

      A friend told/showed me how to make caramel by slow boiling an unopened can of sweetened condensed milk. I was in awe and have been trying to figure out something to use it on. Seemed like a good fit

        I've heard of the condensed milk trick, butt never tried it. Interesting...

            Take unopened cans of sweetened condensed milk and place in a pot. Remove labels. Fill with water until the cans are covered completely. Bring to a boil. Reduce heat but maintain a slow boil. Cover. Add hot water to account for boil off keeping cans covered. Let go for 4 hours. After 4 hours, remove from heat and let cool. Done
