  • One Pot Chili and Cornbread

Saw a YouTube video where a lady made chili beans and corn bread. Looked really good and since I have everything to make it here is my version.

In a CI Chicken Fryer pan I added 3 pints homemade canned chili that I had added diced jalapenos and cheese to.

To that I topped it with some corn bread mix that I doctored up with some kernel corn I ran through a food processor, and more diced jalapenos and cheese. I had too much corn bread mix so I added it to a small CI pan. and then on the grill indirect.

After about 40 minutes the extra corn bread was done.

Pulled the one pot meal after an hour

Let it rest for about 20 minutes then dub in. Topped with a little more cheese and Sriracha sauce. Was really good but too much corn bread. I had made a double batch so next time I will just keep it to a single.

Huh...that’s pretty slick. Wouldn’t think the bread would bake out right? Well, guess I shouldn’t think

Rainy morning here. A good bowl of chili sounds pretty good right now.

That'd be good with some of that Cincinnati chili Brian.
