What I have found about hanging around here, is that the power of suggestion, or the "enabling factor" comes into play. Just so happens, I have not done wibs in a while, so guess what? Yup. Wibs.
I had two racks screaming from the freezer to come out and get warm. No problem. I seasoned them with JAB, MHGP, and brown sugar. Let them sit for an hour or so while I fired up some RO lump and apple chunks.

Done. I never foiled them. Had a temp spike which got them done early.
