It's funny how you hear about SOS (hamurger gravy), southern sausage gravy, but unless you're from up in here you don't really hear of creamed dried beef. Same difference as the others, but much better! This is very expensive to buy. I was getting meat the other day and saw that it was $11.99 a pound!
Bear you sliced yours thinker than what we get, we usually get it chipped so that it's almost paper thin. Imagine the look on the ladies face last year when I had to order 5 lbs for a tailgate breakfast and needed them all chipped! She was NOT happy.
I love that appetizer too!! Some people will put slivers of pickle in there wrapped up too, but I don't care for that.
I'm definitely going to have to try this some time fo sho!!
Yup---It was always expensive!! My Brother used to get a lot of it free at Christmas. His wife's sister was married to Bill Knauss, owner of "Knauss' Meats" (Biggest Dried Beef maker on the East Coast). Bill (a classmate of mine) died a few years ago, and after three generations, his Son sold out, took the money, and ran.
I tried to slice it thinner, but I wanted full slices this time, and it was falling apart. The guy (in Pennsburg) who used to do my Deer hind quarters into Dried Beef (Venison), had a neat chipping machine. He just put the meat in it, and it chipped it real thin all by itself. Then it laid on a conveyor belt & came right down & fell in the pan.
That Cream Cheese/Horse Radish appetizer isn't bad with Lebanon Bologna, but better with Dried Beef.

Here's my Crazy Bear Opinion on Creamed Dried Beef and my Dried Beef:
As much as I love Creamed Dried Beef on toast, we never use any of my Dried Beef to make it. It is my opinion that even if you put the dried beef in late in the process, it still loses much of it's flavor.
Mrs Bear buys the pre-made Creamed Dried Beef, that only needs to be heated.
My Dried Beef is too precious to me to use for that.

looks great, john! guys, if you haven't tried this, it's easy as it gets, and i can vouch for it - can be used with pretty much any meat, and tastes great!! much better than that stuff in the jar!!Fundamentals matter.

Hmm, not something you can buy over here.
So basically beef ham.
Or a sort of pastrami.
Guess the only unusual thing is the long low temp smoke - which would be where it dries out a bit.
Looks really great
