  • First go at smoking a whole tri-tip

    So I tried smoking my first whole tri-tip (quite small at 700g). Coated it in Tatonka Dust and used the snake method to smoke it at 225F with hickory and Black Wattle wood on the performer.





    Smoking Away - with an interested observer.



    Cooked until 140F IT then sliced it. Completely forgot about slicing against the grain!



    Also made garlic butter for garlic bread on the OTS and my wife made garlic roast potatoes in the oven.



    Bought four whole tri-tips from Costco (along with some tri-tip steaks and some baby backs) so will get more practice.

    Oh yeah that is one fine looking TT!! I love those things! Picked up two last weekend for 3.99 a pound! cant beat that if you ask me!!

      OH man you definitely can't beat that price. I'd be filling the freezer if I found them for that price.

      Great looking Tri Tip. Your going to be hooked now. The Tatonka dust just puts if over the edge IMHO.

      P.S. I love that performer. I'm dying to buy one of those some day.

        X2 Costco has great tri tips in Az, and the Totanka Dust really makes em stand out! Good job, sir

          Tri tip is such a great fast smoke

          Ahhhhh, love tri tip! We picked up two 2.6 lb'ers at $3.99/lb for a Labor Day smoke. Still enjoying the last one.

          We have our favorite homemade rub and our favorite commercial rub (Santa Maria Style Seasoning by Scott's Food Products).

          Rubbed, in the 225-230F smoker until the temp was 135 (just over an hour), then a reverse sear for 4 minutes a side, lastly wrapped in a roaster in a cooler for a 90 minute rest. Nice medium rare. Sliced 1/4" thin and served with the au jus in the roaster.

          Man, I gotta start remembering to take pictures!
          The big oak tree in my backyard ain't just for shade any more since I started smoking meat!

              I was so blinded by that amazing looking TT that it took me until today to notice your wife's PERFECT garlic roasted potatoes! YUM! Found a recipe online and they will be on our table this weekend!

              BTW, we usually do two TTs for just my wife and I. Usually have a pound or more left when we get tired of sliced. Leftover TT make a GREAT beef stroganoff.

                I was at Costco the other day and they had their 6 pack Cryo vac packages of Tri Tips for $3.99lb so I bought one up right away. I think I have 9 or 10 individually packaged Tri Tips in the freezer right now which makes me very happy.

                        Nice job. Awesome color and the TD is great on them. Proper slicing helps. You've got more to practice on. Lol. Have you tried the steaks yet? Put some of Barkonbutt's Ranchman's butter on them.
