Worst case, can I use the oven and keep it at it slowest setting(170) and keep the meat double wrapped in there? Or is the wrapped and insulated cooler better?

I would leave it in the cooler as long as I can, 170 is fairly hot for holding, my food dehydrator runs about 170 if ya see what I'm saying...

Oh I do. That doesn't sound promising lol. Worst case, I can heat it up a little in the even if it drops from being in the cooler?

I have it in the cooler heated. Brisket is foiled and wrapped in towels. Ambient cooler IT is 140-50ish

170 is fine to hold if it's wrapped. The IT should have been in the 200 range to finish so 170 is not going to cook it more. If you can keep some of the juices in the foil so much the better.

The flat turned out somewhat lean and almost chewy and the point was much softer.
