  • If this butt ever gets done it will be a miracle

I'm on hour 10 and a half and these 4 butts are all running around 172*. They hit the stall of death at 154ish around 1:30. I got tired of feeding my smoker and put them in the oven a couple of hours ago.

I'm glad I wasn't planning on eating pulled pork for dinner.

Speaking of dinner I made braised lamb and vegies.

Yup, I just gave myself a double drool.

A little over 14 hours for four butts. All I can say is wow!! I am going to bed.

It has been a long time since one has gone that long for me. I think 12-13 was my longest before this.

The last ones that I did took about 11 hours at 225-230. They were relatively small (about 6-7 lbs each), I did a 10.5 lb butt earlier this year that took almost 15 hours to reach 195-200 internal at 225-230, so I will say that size matters. Low and slow is the best method for butts in my opinion, and you can never rush bbq perfection.
