Not using my electric smoker, that would be sacrilege knowing my Yoder 640 is on a truck coming home to me! And that is tomorrow!
Decided to do some fatty pork chops and stuff em.
I made the holes and brined in a basic salt/BSugar/garlic powder and a big sprig of fresh sage. Got it real hot so the sage would meld. Cooled, added ice etc then the chops went in the bag for 3 hours.
Made basic stuffing, had some dried cranberries, no apples. Added some hot soaked cranberries to the stuffing and stuffed em.
On the grill, a decent gas grill with grill grates. Cooked both sides a bit then off to slow cook em'.
Other side:
Made some tater/spice/onion and a bit of cabbage mix. Standard olive oil, spice, mixed in a bowl, tossed on the grill when the meat temp was 120 or so.
Needed a sauce, had a pantry. Found some yummy prunes, chopped, honey and other stuff including glorious butter, let it reduce, I got my sauce for the chops.
Cooked the chops to a great temp, glazed them, finished off the taters etc.
