This was posted on the Taste of Home forum that I frequent and I followed the web addy in the pic to www.my-easy-cooking.com where I found the original recipe. I can't wait until I can get my Bud from across the street and his S/O over for dinner and see the looks on their faces when I take this from either the oven or grill.
Lemon Chicken Breasts

Ingredients:
1 sprig of rosemary
1 whole chicken
salt and pepper
olive oil
1 lemon
1 can of beer - drink half and keep other 1/2 in the tin
Method:
Rub oil all over the chicken and season inside and out. Use your fingers to loosen the skin from the breasts and slide the 2 halve lemons in, skin-side up. This way the juice of the lemon will coat the breasts and keep it from drying out! Place the sprig of rosemary inside the chicken and place the chicken in an upright position on the beer can and cover with foil. Roast for 40 minutes and remove the foil. Roast for another 10-15 minutes, basting every 5 minutes until the chicken is golden brown and the skin is lovely and crisp!
John’s Note:
This is just how I got the recipe, with no cooking temp. Seeing as how it calls for less than an hour of cooking time, when I try it, I’ll set the oven at 375º - 400º or do it on the grill. Either way I'll use a temp probe.
