    Hi, all. I have been checking this site out for a couple of days & decided to join. I have seen lots of good information & good folks helping out others so I am sure I will enjoy it here. I am a Firefighter Lt./Paramedic in West Central Florida (30 years) and have a custom cabinetry business as well. I have a great wife & two girls that are grown & gone (yes!) and 3 grand kids. I have been smoking fish & game & meats for about 25 years on the smoker that I built. It is wood 2' X 2' X 6' high, charcoal fired and works great. I have recently purchased a MES and I am going to try my first brisket this Monday. I will let you know how it comes out. Thanks for having me.

    Well Larry, aboard young man. 25 years smoking meat is a long time. I was a volunteer firefighter/EMT years ago. Show us some pic's of the brisket, nothing like a big chunk of meat smoking low and slow to dig into 12 hours later. So being from Florida, I reckon that makes you a Dolphin and Gator fan, if so, we won't hold it against ya, honestly. Just kiddin', you go on being a fan of any team ya want, as long as your a fan of Smoked-Meat nothing else matters.

                      hang on, you've got a charcoal fired WOODEN smoker ?

                      Pics please - this is VERY interesting. I can make things out of wood - no problem, it's the damn welding and metal that I can't do.

                      The only wood smoker I can think of was tips (?) and it either got run over by a relative or went up in smoke (I know something drastic happened to it) not sure it was a hot smoker though.

                      Definitely want to see how you've done this.

                          Welcome Neighbor, always nice to see another Floridian. There are a couple more locals here. Post up some pics of that brisket and your smoker!
                          It sounds like a traditional "Cracker" smoker, I haven't seen one in years.
