Rich sent me a sample of his latest creation awhile back. I had been meaning to try it out, but it's been a heater out so I've avoided the smoker for awhile.
Here's the sample. Due to my p*ss poor math skills, I had to send Rich a PM asking how much for two 2.5lbs chuck roasts.
Here's a close up for color/texture purposes
2.125 oz's
Took a spin in the magic bullet. Then split into 2 portions. One of these portions was mixed w/ a pint of water for the 2 chuckies
Pretty good sale price
Injection
Heard this one was great w/ Beef
Baked some THICK bacon for burgers...waved it up for looks
Back to Chucks...
Chilled for 3 hours
UDS getting prepped right now
One more shaking of Red Dirt
9:20 pm. Onto the smoker for an overnighter
Done
Final weight.
I taste tested a few bites. Had great flavor, plenty of moisture. I give both the injection and the rub a thumbs up! A couple buddies were over for dinner and they made sammies. Said it was great
Well, he emailed me on injection amounts...I think they were about 2.5 Lbs each as I recall.
Thanks Rich. Ok, so 2.5 lbs went on for overnight? What temp and how long? I am super curious because my last chuckie (first also) didn't turn out. There is a sale right now and I almost bought a couple to try but .......

Thanks!
I put them on at 9:30 or so, and took them off at about 6:30.
I ran the iQue at 220, and they were at 173 when I got up. I should have taken them off at about 4:30.
I decided to run it lower just for that reason. But chuckies for me (or the drum) always tend to take longer than pork shoulders and also hit a longer stall.
