  • Smoked Chicken Tenders.....

    Did some chicken tenders for the kids last night. This is Wingman's recipe and it's very good.

    I use HAW and some Smitty's to keep the heat going. As the kids say, it's just the right amount, anymore and they'd be too hot. They just dip in ranch and eat them up.



    Done



    Figured I'd smoke some Italian sausage since I had some time.



    Was a good night and good food.

            Yeah, those do look delicious. I gotta view Wingman's process and put that to use.

            I think it is great that your kids crave some spice and heat and that they are exposed to this to broaden their tastes...so many kids I know about get choked up if they find a speck of pepper. When I cook for larger groups I always have to stand down with the spice...I had one lady at work actually say that cracked black pepper was too hot. I didn't think that black pepper was a heat producing agent.

              Very nice pete...Love cooking breaded meat on the grill or smoker...

              I started my kids with very small amounts of heat and gradually bumping it up a little at a time...25 years later my daughter can eat some hot stuff but my son will eat shit than I wouldn't even think of

                Awesome! Hard for me to find fresh tenders around here, butt Costco has em frozen and they are still really good. Nice Pete!

                      Smoked Chicken Tenders.....

                      I use a BGE, so I have a ceramic plate setter underneath when I use indirect heat.

                      I put foil on top so that any dripping cleanup is easy and I don't cook it again on the next smoke. Plus, it keeps the ceramic clean not that it really matters.
