  • BLSL Turkey Breast ?

    A friend of mine from work gave me turkey breasts to smoke for him. He wants them for Thanksgiving and I will be smoking them tomorrow. Questions are; should I pull them off the smoker at a lower temp. than 165? Also I want to vac pack them, so what temp should they come down to before I vacuum seal them? Also should I suggest he reheats in a water bath to keep them from drying out? BTW, I'm dry brining them. Thanks Dominic

    I'd go to 160° and pull them...they will continue to the 165° mark once you pull the breasts. I'd let them cool a bit to under 100 or so before I vac sealed them. If he could reheat them gently in the vac bag, it would ensure that they remained moist and delicious. Take some pics...I'd love to see what you got going.
