  • Green Chile

    They have started roasting the Young Guns Hatch Green Chile in the New Mexico supermarkets. I picked up a box of hot and a box of medium on my way home from Ruidoso.

    Last year because of heavy rains the harvest was delayed. I haven't tried any yet but the chiles are noticeably larger than last year.

    I was chatting with the guy roasting my chiles and he said they cut back the irrigation toward the end of the season to make the chiles hotter???

    I picked three of mine tonight for my discada gig...
    I know...If I grow em in Kansas I can't call em "Hatch" peppers

      For me Green Chile is like bacon to you... it doesn't matter what brand, it's all good.

        Yep, all of the stores here have it. A co-worker is working on 120# of green chiles. They can them, freeze them, and turn some into sauce. They are native new Mexicans. Not this gringo. I might do 5# or so.
