First off, I started oot with fresh Snapper, Flounder, and Cod fillets. Sprinkled them with Magic Dust, gave them a quick egg wash, then into a cornmeal-salt-peppah coating. Yum.

Ingredients
• 2 cups water
• 1 teaspoon of coarse salt
• 1/4 tablespoon ground cumin
• 1 tablespoon butter
• 1 cup long-grain white rice - Basmati or Jasmine is really good too.
• 1 teaspoon lime zest
• 2 tablespoons fresh lime juice
• 1/2 cup chopped cilantro
Directions
1. Bring the water to a boil; stir the salt, cumin, butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
2. Add the lime zest, lime juice, and cilantro into the cooked rice and fluff with a fork just before serving.
Note: Different rices require different cooking times and liquid quantities... pay attention to that.
