I would say tri-tip but not sure if you get that on the emerald isle - I have smoked a leg of lamb on mine, indirect heat wood chips, just gotta watch it and tend to the coals. My favorite leg is rubbed with garlic, drizzled EVOO, salt, pepper & rosemary smoked with cherry. Yummylicious! can't wait to see what you do!

Well after a long dispute with a supplier( sent original black kettle instead of the Crimson master touch I paid for[emoji35])
This arrived today
Now hopefully the weather plays its part I will do my first ever cooking on a charcoal bbq [emoji1303]
