            Thx Critter. I like the pic of ya smoker. Homebuild? Bet that cabinet will hold a load of sausage. Being an old geezer, I ain't too "smarts" on all this 'puter tech stuff, but I may be able to convince one of my younguns to take some sausage pics and post them. We all work a loooooooonnnnnnnggggggg week with only Sunday off. Spent the better part of the day Friday making deer sausage for some of the locals. Will probably make pork sausage this week. Gumbo weather here and the locals love to add that "poke" to the mix.

              Heh..nice intro Poke. Love to see the family stuff carried on. There was a lull for a generation in my family on the sausage/meat thing..and it was almost lost... but I dug it up and am doing my best to pass it on.

                  Thx Richtree. The intro was from the heart. I often tell people this about my past just before Thanksgiving. When my brother and I were growing up we did not know about having turkey at Thanksgiving. This special day was for the annual "la boucherie" at our house. At least four corn-fed hogs waited in the pen while the wood fire heated up the scald water in a "half cut" 55 gallon drum. As the sun lit up the sky poppa would stick his finger in the water to test it. When it felt right the first hog was slaughtered and the work began. Everyone took turns scraping the hog hair using an old timey cane knife. After the hog was gutted then the insides was taken for boudin along with lean strips of meat and little bits of fat and the backbone was removed for stew. While the lady folk got busy cooking some of the men started removing the skin for cracklins. While this was going on the next hog was slaughtered and the cycle was repeated. When the cracklins were cooked they were dumped in a cardboard box and salted, then sliced fresh sweet potatoes was dropped into the hot cracklins grease. Fresh un-stuffed boudin was brought out in a dish pan so the men could test the seasoning. Once the nod was given the lady folk went back to the house to stuff the boudin into the casings. This was an all day affair. Of the four hogs we had one to put in the freezer because all the family and friends got some meat to take home along with fresh boudin and cracklins. This was Thanksgiving in our family and we always looked forward to the next one. Keep passing on those family traditions as long as you can my friend, because if we don't it will be lost forever. Different world we are living in today. Looking forward to a good experience here on smokedmeat.com--

                          Thx for the welcome BBQ. I agree, this is a great forum, lots of info. and good people. Soon as the rig is built I will try my best to get some pics posted. Like I said earlier, I'm 'puter stoopit but I will do my best. We just had a disconnect (service failure) and it took my son a while to get this thing running again. BTW-Whatcha think 'bout a lumanum rig? Will it work?

                            Sons have them fancy telephones that take pictures and gets ya e-mail and radar weather and all that other stuff. My son says he can likely send pics by e-mail. Gonna figure it out some kinda way. Ain't seen a coona$$ yet that can't get er done --Know what I mean? BTW-That rack of ribs sure loos good, can almost taste them.

                              Heck yeah...you can make a decent smoker out of a friggin cardboard box (alton brown)...aluminum will be way more durable and not even close to as heavy as some of the steel ones...if you are worried about heat loss, you could always insulate it! Are you doing something special for the firebox? will it be a propane unit, a watt burner, or charcoal basket? Can't wait to see it
