  • Beast Stew w/ a Hint of Smoke...

    Picked up a package of small beef round steaks a while back & figured they would make a good stew. I took the beef, while still frozen, and put it in the smoker with some cherry pellets for aboot an hour & a half...


    After the smoke I cut up the beef into aboot 1 inch pieces & hit them with flour, s&p, garlic powder & a bit of thyme. Then browned them in a pan & put the pieces in the slow cooker with carrots, beef broth & overexposed taters & dried onion...
    Unfortunately, after I was done with the pan I stuck it in the sink to wash up. After soaping up the pan I realized I should have deglazed the pan & added it to the mix... Bogey!!! I ended up making a roux with a bullion cube to compensate. Here's the main players...


    I didn't really get much of a smoke flavor, you had to think aboot it to taste it. Maybe some hickory pellets next time... Here we are in the bowl after aboot 6 hours in the slow cooker...



    After all was said & done, it made for a rib-stickin' good meal. Thanks for stopping by...

    what if ya smoked all the veggies and the meat fer an hour next time.........nice to see ya using the lil' stand up.

      Yeah, well... In the rush to put things together this morning I didn't think of that. Good idea.
      I've been using the stand up for cold smoking. I have an element for it bhut haven't got round to installing it as yet.

        Smoke taste or not, that stew looks delicious.


        You could smoke the meat and veggies, then put everything together in a pot/Dutch Oven and let it slow cook in the smoker. I've done this before and it comes out with a good smokey flavor. I do this in the summer, keeps the heat from cooking out of the house.

          Well that should warm the bones on those cool Arizona evenings

          Thanks for the reminder...I have a huge turkey carcass in the freezer...Need to get it out for some turkey bone soup

                Look Good, be right nice with some garlic toast!

                Think the meat being frozen blocked the smoke??

                    More than likely did. I kinda knew it would bhut it was the best way to keep the beast cold on the warm Az. mornings. By the time I took it in, an hour a 1/2 later, the meat was completely defrosted bhut still cold.
                    And the garlic toast would have been good... If I only had some...

                      That is some tasty looking stew, Ice! I like the big cuts of potatoes and carrots. And we eat biscuits with our stew.

                          Bingo. I do this with chili all the time.

                          Great looking stew sir.

                          Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                          My best asset however is the inspiration from the members on this forum.
