          I just add some spicy goodies to corn flour,called masa in the south.
          I never liked cornmeal.to me,it's like eating sand.

              Just did some pickles yesterday with corn flour and panko. Used buttermilk. They turned out great. Some great ideas in this thread I will be trying!

                  My go to is first shake the fillets in seasoned flour (Flour, Lemon pepper, more pepper to taste, seasoned salt), let them sit on a plate for a few minutes for the coating to stick better, then dip in Drakes crispy fry mix and fry. You can regulate the thickness of the outer coating by the thickness of the batter. I like to make it the consistency of thin pancake batter.

                  For a good dry coating use 1/3rd Drakes, 1/3rd fryin' magic coating, and 1/3rd crushed pretzels, along with the lemon pepper and seasoned salt. Shake it all together in a ziplock bag and then shake the fillets in the bag to coat. Just don't use that last little bit in the bag as you will have very salty lemony fish! You will know when to make more as the taste will slowly increase in salt and lemon.

                    I got turned onto a beer batter mix... McCormick... they make a very good mix, and when used with a good beer... YUMMO!!!

                    Serve that fried goodness up with some creamy grits... Heaven I tell ya'!!

                      I like the crushed crackers like minnbill. I use low sodium crackers and mix in some ranch seasoning mix. I also add some fine red and black pepper.

                        I do a baked Halibut with a coating of Hazelnuts. Grindem up and mix with Panko crumbs, Salt and pepper!

                        Very tasty.

                          See lots on here that I've tried and like most of them. For panfish Drakes is the favorite at our house(dry). Walleye usually get a dusting of flour, then eggwash, then instant potato flakes. It's great and makes a beautiful golden brown filet.

                              My favorite is the flour/egg/panko with some seasonings added. Nothing tops it IMO if you want to taste the fish.

                              Potatoes and pretzels as well as the chips and cheetos all sound good fun to try though. I gotta go catch some fish now!

                              Best store bought one is Don's Chuckwagon Onion Ring batter! Killer on fish! My kids eat 'til their ready to bust when I use it.

                                I like to experiment with anything that is in the cupboards. I did try some panko crumbs the other day that aint bad.

                                The best is fish fry friday, no mess what so ever.
