Jeanie I just ran into this post, maybe it will help in the future. I cut the heads off & gut the fish (with scissors), then I like to cut the backbone out from the inside of the fish after gutting. Bread with your favorite coating and fry in hot oil till crispy and munch away.

While I've never done up a mess of Smelt myself....I did go dipping once with my neighbor when I was a early teenager. That was a cool experience.

When I got years older....Dad and I would go to the NASCAR races every June and August at MIS in Brooklyn,MI. On our way back home...we would stop off at a place called Frank's Tavern on Lake Fenton in Fenton,MI. They had the best Smelt ever! And huge heaping piles of them too!! Home made cole slaw that was to die for.

Sadly....Frank's is no more. Been there since the early 1900's.

All I can say is keep the breading fine and medium coated...and deep fry them. That's how Frank's did them.

        Yours look fabulous!

I eat them breaded and fried all the time. They are pretty popular in Washington. My kid brother smokes them and then you can eat them like a candy bar. Yours look very good.

Thank you Phil, that looks like a simple but good recipe.
Have you ever tried smoking them or is it best to fry?
            Smelt...fry them...

Pike is VERY good eating, nice firm, flaky white meat BUT two things....They are the slimmest bastards you will ever encounter...snot rockets..

two..they have a fine Y bone in them that is a pain in the ass if you don't cut it out! Getting them out takes a little practice. But I get a lot of pike...Im good at it!

Thank you Speedway, I bet dipping would be a lot of fun. Those Frank's smelt sound awesome! Wonder if any other bars up north serve them... seems like they would be a good snack with cold beer.

Thank you rehless! I liked these, will give more cooking methods a try but the fried weren't too bad.

That would be amazing!! I've never been ice fishing at all. I think I would like it if I didn't get too cold.

                      Still talking smelt?

You only need two for this recipe. Make a candle out of one and roast the other over it.

                        Cool Video!!!

Did a lot of Ice Fishing years ago, but never speared any.
That wouldn't be legal in PA.
I've often shot Carp & Suckers with Bow & Arrow, but it's not legal for any of our Game Fish.

Looks like a lot of fun though!!

Interesting! I have heard of candle fish but didn't know they were smelt. I should give it a try... I still have a bag full in the freezer. Thanks!!

Bearcarver, I enjoy bow hunting carp. Haven't been in awhile but you can sure get big ones if you find a good fishing hole.

All this talk about fish has my fever up. I'm going to grab my gear and go fishing tonight.

                              RE: smelt candles

I think they have to be a certain type of smelt that's only available in the north wets side.
