Well my lovely daughter made it home for her yearly visit...
We always have a big get together for all her cousins and friends...
We all decided this year we would have a taco bar kinda thing...
Because that will be easy, right?
First day I smoked up three chuck roasts done according to Fire It Up's barbacoa recipe...
Felt good to have the Longhorn running again...
And the chucks looked like this when I took them in the house to shred...
Another day we did the split butt thing on the green machine for some spicy pork taco meat...
In the CI pot we cooked some red onion, garlic, and Jalapenos...
At 160 degrees the pork goes in the pot with a little chicken broth and with the lid on cooks till probe tender...
While the pork comes in the house to get shredded the stock continues to cook indirect to thicken...
Then it all mixes together to make some awesome tender pork taco meat
And someone said we needed to serve Pasole with the taco feast...
So another day we smoked a 3.5 pound picnic roast till 140 degrees and cut it into chunks...
Chunks swim for hours in chicken broth and in another pan we cooked onion, garlic, and roasted Hatch peppers...
After the pork falls apart easily the soup is all mixed together and seasoned well
And with no pics the taco bar consisted of barbacoa beef, spicy pork, ground beef, Pasole, fresh pico, smoked salsa, fire roasted salsa, Yuck-a-mole, lettuce, cabbage, radishes, green onions, sliced japs, lime wedges, smoked cheddar, smoked pepper jack, some other kinda cheese etc........
Also had refries and some awesome rice cooked up just like Squirrel taught me Fried some soft corn tortillas and grilled some flour shells...Also had some crunchy taco shells just because...
Yeah...Tacos...That'll be easy, right?
No pics of the party or the people but I did get a pic of my first plate...
Barely had room for Lena's awesome potato cake and ice cream for dessert...
Party is over and me and Mamma are tired...
Next day we filled up on the Pasole leftovers...
This is a properly dressed Pasole Rojo...Warm and spicy...
Yeah there is some soup under that salad
