Still working on the disco cooking. Made a few changes to the usual repertoire this time and I made a cradle for the Blackstone to sit the disco in. Pretty rudimentary but it works OK.
1) Once I cut the chicken I added cornstarch to it as well as some panko crumbs - The cornstarch seems to help the sauce/flavor stick to each piece. It gets super sticky and you need to work quick to break them up as they are cooking. Not sure if the Panko helped or not Should have tried just one at a time in hindsight...
2) Instead of the pre-made sauce I tried out the packets and mixed my own - This seems to work pretty well + you can tailor it to your liking a little better, me thinks and it's a little cost savings to boot
Added a couple eggs to the rice too...
The only thing I don't like about disco cooking is that it happens so fast that I can't sit back and enjoy a Natty or a drink
