    This might be a technique Kelly (BBQGoddess) could use as opposed to the Texas toothpicks.

          I like a double hitch rather than the single. It holds better when your fumbling round with the meat and gives a more uninform loop.

            I seen your blog Dan, and some of them sausage trussed up looked so pro like. I suppose thats the double hitch eh?
