      i believe that would violate food saftey rules. Besides..it would be cooked before it got to the smoker!

            A MINIMAL amount of Tenderquick... 1 tablespoon sprinkled over the 2 Lb. slab.
            Dehydrated lemon peel and CBP. Also a dribble of "garlic water", liquid from a couple simmered cloves.

                  She's about 200° right now. Small load of lump and the breeze is helping :{) I hope to get a couple hours of smoke on it before it flakes.

                      Sorry I din't get a shot right outta the smoker...but here's a lunch goin' into the freezer.



                      I liked the vine maple smoke. A bit different... Hmmm deeper? than regular maple. Not at all overpowering on the salmon tho.

                          Sheesh, with all that CBP I'm suprised you could even taste a hint of smoke ..... Looks Good from here.... Any further plans for it: dips, spreads, fritters, etc.?
