Cryo packed meat shelf life?

    As far as I know. I just use reasonable judgment and behavior. If I buy butts for smoking butts I'll let them stay in the fridge a little longer than if I'm making sausage, since sausage makes for more handling and times of warming up and re-cooled. So I make sure I make sausage within 2 weeks of purchase and 3 weeks for pulled pork. Also since pulled pork cooks to an internal of in the 200* range over many hours. Remember time at temperature is your best friend when serving safe cooked meat (though the government doesn't see it that way but what do they see the right way).
