We don't see many Salmon around here.
We have to leave the state (to NY) to catch Salmon.
The only Salmon Eggs we see around here are preserved in jars, in sporting goods stores, for Trout Bait.
I'm sure you guys in the NorthWest know a lot more about Salmon Roe than I do.

never heard of doing anything with salmon roe except catching more salmon. we have a real healthy shad run on the Umpqua river. it is non stop fishing action if you catch the run write. people around here dont eat them much but will have to obtain some of the roe. sounds odd but you never know how the palate will react until you try it. thanks for the post may be my next favoritesigpic

I've only had Sturgeon Caviar and didn't like it, but some do.... Just teasing CA a bit... Salmon/Steelhead roe, IMO when cured properly, is the best bait for Salmon/Steelhead.... That's just what we do with it around here anyway... Some might have other uses that I haven't seen... Frying sounds very interesting.sigpic

However the Roe from Shad is the second best I ever had, "fried or broiled".

it's the texture of the roe that puts a lot of people off - kind of grainy. But very tasty.
Just bear in mind it's massively high in cholesterol !
It's all those squintillions of egg yolks :-)
I've seen salmon eggs for bait - but kinda like taking cheese or luncheon meat when carp fishing, I tend to eat more of the bait than the fish do
And samon caviar is pretty bloody good - if you're a caviar fan, which I am and would be major big time if I ever won the lottery :-)
Grew up with lumpfish caviar in my sandwiches for school lunches :-)

Yup---Shad Roe is super high in Cholesterol, & Calories, but it's also has about the highest percentage of Protein of any food.
BTW: The Salmon Eggs we buy for bait is packed in a form of Formaldehyde.
