  • How long do delis keep their meat?

    I was curious if any one knows or might actually work at one. Like say walmarts deli. They've got umpteen tons of sandwich meat sitting there whole on display. Surely they don't toss that after 7 days if they don't sell it. Do they donate it to meals on wheels or something.

    I figured if you cooked the whole, lets say, roast beef for instance that it would have a longer shelf life if kept whole and cold. Or maybe the put additives in it to keep it good longer?

    I've been meaning to ask the guy who owns a local deli I frequent but havn't got around to it yet. I think he just got back from his month long vacation. Dang good food. He comes in at 3 or 4 in the morning and starts making his own bread and stays open from about 11-4 Mon. thru Sat.

    If no one knows I'll stop in there and eat lunch this week and see if I can find out. But I bet someone here knows.

    Most of that stuff is cured, Sam. And left mainly wrapped under cold, humidity controlled good quality sanitary conditions, it's prolly good for a month or more in some cases. Those hard aged salamis... measured in months/years.

    The presliced loose stuff will not keep as long, due to dehydration and increased exposure to contamination, but that big ole hunk of ham they slice from is good for quite a while.
