  • Shrimp With Lo Mein Noodles

I've been doin' some simple cooks and just haven't had the time to take pics of cooks with everything that's been going on at the house. So, tonight I took a few pics(not very good pics).
I tweaked a Thai Spicy Sweet Chili Sauce that I have made before for the noodles and a dippin' sauce for the grilled shrimp.

Shrimp seasoned with a mix of garlic, lime, CBP, Sea Salt, and ginger

    Dry Lo Mein noodles

Shrimp going onto the Keg heated to 450° using RO lump and orange wood

    Almost done

Shrimp served on a bed of lo mein noodles cooked with a Thai Spicy Sweet Chili Sauce

    Closer view

    Thanks for lookin'

            That last pic is money.

I have made this sauce a few times before and have tweaked it a little each time. This time I made it hotter and I think this is what it needed and the taste I was looking for.
Has anyone else tried this recipe or one similar and what were your thoughts.

This is the recipe I've been working with.

                    http://thaifood.about.com/od/thaicur...uce-Recipe.htm

This is what I used after tweaks

                    1/2 cup rice vinegar
                    1/4 cup + 2 Tbsp. white sugar
                    1/4 cup light brown sugar
                    1/4 cup water
                    3 Tbsp. fish sauce
                    2 Tbsp. mirin
                    4 cloves garlic, minced
                    2 tsp. dried crushed chili
                    1 tsp cayenne pepper
1+1/2 Tbsp. cornstarch dissolved in 3-4 Tbsp. cool water

I keep adding more heat to the sauce. It's almost at my limit.
