Howdy --- Alan From Northern Utah. I'm a newbie to all this, but determined to see if I got what it takes and love the whole process. I bought me a used new Braunfels offset smoker (char broil bought em out I guess, they look the same).

Got me couple racks in the fridge now. All I can think about is my saturday morning :)

Thanks Man. Yah, I did last weekend. Smoked 3 racks with a buddy of mine and made the mistake of trusting the temp guage from the lid. It was too low and the ribs just weren't right. Went and got me a digital one to try this next run.

Good call. There are replacement thermos for it no doubt. Look into Tel-Tru brand.

the smoker is in decent shape, but I haven't seasoned it. I think the guy used it once or twice at most and it just sat in his backyard. I need to do that....

                          Ha!
So I guess I should have read this thread before wondering in your rib thread if you were new to smoking

Alan, as you've probably noticed by now this place is full of so many good and knowledgeable folks who love nothing more than to help others pull off a perfect smoke, well that, pictures and eating some good Q.
