  • Sweet Italian Sausage

    I picked up a nice pork butt last week and made a couple different sausages. 2Kg's each of sweet Italian from the Marianski's, book.

    I've always avoided Italian sausage recipes that had coriander, caraway or anything else but salt, pepper, fennel and garlic because it's not the way it's done around here, but I thought I'd give it a shot anyways and I'm glad I did....This is a pretty darn good recipe. and will be making it again.

          Good looking sausages

          I've had good results using Marianski's recipes. His Smoked Polish recipe is still my go to for a great simple sausage.

            Looks great Dan, Add some diced green, red and yellow bell peppers and a little heat and they call it Sicilian sausage at the butcher shops around here.

            Warming up the fennel really makes it pop as well. CP's mix is real good for consistency.

                          A little red wine vinegar and some paprika adds a nice touch also.
