Aka street corn. We went to a great Mexican place in Vegas a few weeks ago one of there appetizers was Elotes Asados on or off the cob. We like if off as you can dip chips with it and it went great with the Smokey Mezcal cocktails we were drinking. Once we got back I'd been craving it so I fired up the grill and went to town!
It's my firm belief that one must char the corn husk on, adds so much more flavor!
Made some ABTS too.
It was taco night so fired up the side burner.
Cook until the husk is charred off.
Scrape into a bowl.
Add a good crumbly queso, cilantro, jalapeņo, garlic, chipotle powder salt, pepper and fresh lime juice.

Damn Case those look great! I'd kill several of those in no time! Love adding the corn to the tacos! Corn salsa and tacos have always been a favorite around our house! Nicely done sir!
