  • First attempt at sourdough - kind of fail

    Got a sourdough starter from King Author (which has been continuously fed for over 100 years) over a week ago. I have been tending to it daily to get to today. I actually got the dough together yesterday for almost 24 hour rise. Balled it up today for second rise. Then baked and cooled. Bottom line, I didn't get the elevation I was looking for, but I think it was from my balling it up, it didn't stay in a tight ball. The flavor and crust are excellent though! Next weekend will give it another go...

    I have the same starter I bought 10 years ago! Did the recipe call for any yeast? When I first started with it I had the same issue. As your sourdough ages it will get better and better. You will also get the spores hanging around in your kitchen which helps.

      It didn't call for yeast, I wanted to start with just sourdough. I have one in the lineup that calls for some. I have the starter in the fridge until next Friday now...

        I had some starter that I got from Gunslinger...That's when I learned I can't make bread to save my ass...

              No SD expert by any means...but here are my thoughts after having worked with a 30+ year old starter from Bassman for 10+years:

              It shouldn't take 24 hours to proof a loaf once your starter is "on". That's after your sponge is done and ready for bread.

              A week isn't long enough to get a new batch of starter, started.
              The more you use it and feed it, the better it gets.
              I would suggest some easy projects that will allow you to use and then feed it, like pancakes or biscuits, three or four times, then go after the bread again.
              If that doesn't sound like a plan, let your sponge go an extra day, then turn it into a loaf.

              Bassman will hopefully be along and give you some good advice!

              All that said, this loaf looks killer, Shellb!

                      Sister that is just gonna take some time with the starter...you fine...feed/burp/purge...when i purge it's a pancake or waffle gig...

                        I am not sure if he is talking about bread or natty's ...sure sounds like beer drinking to me.
