    6 Hours in..... Natty's & sun catching up ta Fish Daddy Expected a bit more color, butt oh well

    Yeah, I do like the room on these 26'rs ..... Was thinking I would try & keep it clean & for special cooks only..... Now, I'm thinking F that, I like the room & it holds temps really well

        9 hours in smoke @ 230-250..... Internal is aboot 150-155..... Transferring to the big roaster oven with some Mad Hunky beef injection & beer for liquid..... Set @ 200 ..... See what happens

                        Best one to date for me... Juicy as could be.... I cut a few slices for the neighbor & the rest will get trimmed up & cubed for burnt ends.... That's the best fit for us.... Take them to parties with a toothpick in them

                        Bill, fuse method is lining up a row of coals around the perimeter of the kettle & lighting a few at one end & letting it slowly burn around to the other end. Works really slick







                        I will cube this mess up tonight & vac pack..... I need a bigger cutting board!

                              THat briskets a monster. Looks like it turned out great.

                              Going to have to try the fuse method with the kettle chimney left in the center. It'll work nice as the deflector.
