  • 3rd Annual Golden State BBQ Championship

    Howdy all, I wanted to share the great news with y'all. Kelly and myself have officially entered our first BBQ comp.

    This event is 12 miles from my house. We have entered ourselves under the team name "Two Irish Fools BBQ Team". It is an IBCA event. We are ecstatic about joining these level of BBQ enthusiasts. We are very confident that we do have some thing to add to the comp. Without a doubt. Yet We are not expecting a top 3 finish. That would be awesome! We shall see. We are going into this very open minded and looking for some sort a braggin rights. Like a 15th outta 32 teams would be worth it to me. Now...Kelly just might bitch slap me for settling for less...lol Any way there are some things, like NO GARNISH in the box, for an ICBA event. We will be doing Brisket,Pork butt, ribs and half jointed chicken. for the turn ins. $2- 2 ounce tasters for the public, as well! We are entering this comp with my reverse flow, stick burner... "Erin"




    What's the worst that can happen? We have a damn good time?
    With the bosses permission, we would like to fly the S-M banner at our site!

    We are a part of the best BBQ site on the net,IMHO! So here we go! Yeehaw!

    We would also like to encourage all do's, dont's, tips 'or comments, from our forum family!

                That's great news!! Congrats!!!

                Get a check list together of things to bring... the guys at The BBQ Brethren are hardcore comp goers, and I know there are lists aplenty over there. Of course, you can Google "BBQ competition check list" and come up with a ton of them.

                There's a bunch of good, basic pointers at this site: http://www.bbq-pirates-va.com/bbqcompetitiontips1.html.

                Main thing is, get organized, stay focused and stay on schedule. Get as much done ahead of time as possible, so that turn-in times aren't so hectic. Also, sleep is important (at least in my old age), so you may want to take shifts tending to things during the night.

                One thing I learned very early in my competition experience... have a roof over your head! Sun and rain can be your worst enemy! If you have a canopy with roll-up walls, that's even better.

                Anywho, that's just a few things off the top of me cranium. I wish I could be there with you guys, if for nothing else than to sample your food and make sure the beer is cold...

                  Good luck! Comps are a lot of fun and a lot of work! My best advice, unsolicited as it is, is to do a test comp in the backyard with real turn-in times and some friends for judges. I've just done one real comp, but we as a team did the test run and it was an excellent way to test methods, timing and the all important supplies and "What to do next" lists. Have fun and keep us posted!

                        Congrats and good luck.

                        Make sure your turn ins are on time......and turn in whatever you got even if you don't think it is your best.

                              Alex, there is indeed a potluck dinner Friday night. Kelly and I have been a ponderin' what to do. I like the word epic in this instance I really dont want to over think it though. I think Gunnies drummies quote "stuffed with sausage, dredged in flour,deep fried and rolled in sriracha sauce" unquote...from the man himself! Bravo... Tom... Bravo
                              Going for a test smoke on the rig this weekend. Intake/exhaust mods complete.
