      Welcome! I already commented on your other post but I would target 300 - 350 F for chicken like that. Not trying to render fat/tissue to tenderize, just trying to cook it with some smoke. Can always grill it but if your propane smoker gets as hot as the one I have then it will definitely hit temps over 300 F.
