Made a 10# batch of sausage last night using boneless/skinless chicken thighs.
Used the Green Onion sausage mix that Rich sells and a 12oz Shiner Bock for some liquid.
Used natural casings this round which worked well. Probably get lazy and use the pre tubed casings down the road.
7#s or was the straight Green Onion mix
The remaining 3#s I added 1/2 cup high temp cheese and 3tbls dehydrated jalapeņo.
Test frying and sampling what was left in the stuffing tube, both came out awesome. Looking forward to grilling up a few links for dinner tonight
