SV"d some rib roast ribs for 17 hours @ 150* then finished indirect on the 26'r with some Apple chunks over the Vortex dialed down running 300-350 for aboot 2 hours. Took em to our fantasy football end o year party. I think one of my buddies is buying a SV unit as I type this, and 2 others are considering it.

I did some Lean single Beef Ribs in SV, and the hardest thing was keeping the bone ends from poking holes in the bags.
