I have been making these sammies this way for quite awhile now and I really had the need for one today so I whipped one up for lunch. These will really hit the spot!
You will need:
Sourdough bread
Bacon (I use Black Label applewood smoked bacon for these)
Cheese of your choice. (I like to use a good deli cheese usually a mild cheddar works well)
Apple (again use what you like but I like the tartness of the granny smith)
Dijon mustard
Butter
Fry up your bacon. I cut the strips in half before frying. Makes the sammie assemble easier I think.
Butter one side of each slice of the sourdough bread.
On one slice spread a nice layer of dijon mustard on the other side.
Slice some thin pieces of the apple.
Lay down the apple slices on top of the mustard slathered bread.
Layer bacon on top of the apple.
Put cheese on top of bacon and grill as you would normally.
The flavors working together here are fantastic! These are a bit more work intensive then just your regular grilled cheese but the flavors are well worth the effort. Once i made these there was no going back for me
