Getting ready for this evenings festivities. So yesterday a made the meatballs and sauce.
For the Tzatziki Sauce start with 2 cups of plain yogurt add a pinch of salt and a tsp of EVOO to the yogurt. Mix and place in cheese cloth, hang and drain
Peel and finely chop one medium cucumber. I don't clean the seeds.
Spread on cutting board and place paper towel over the cucumber to absorb the excess moisture. (You're gonna need to do this multiple times to dry it out)

4 Cloves of garlic - minced
1 Small Onion finely chopped
1 TBS fresh chopped dill
1 TBS Lemon Juice (Picture shows White Vinegar which you can use but remembered I had a couple of lemons so that's what I used)
Mix and let it rest overnight

2 Cloves of Garlic - Minced
1 TBS Finely chopped fresh Rosemary
2 TBS Finely chopped fresh Mint
1/2 Tsp Oregano
1 Onion - Pulped
1 Egg
2 Slices of bread without the crust and torn into pieces
1/3 cup of Ouzo
1 TBS Lemon Juice
Add the Ouzo to the bread and let it get soggy
Mix everything in with the lamb.
Roll into balls
Coat with flour
Into the oil for about 8 minutes and they're done
Also put a batch of Firecrackers together yesterday
