    You can do what you want...but the WC adds a nice texture and an "asian" flavor that I think is perfect for this food. Scallops are pretty ugh in the texture dep't. but nice flavor.

        Solar, those look outstanding

        I do a similar thing with shrimp and add a flesh slice of jalapeno...might be worth a try.

          Yes you can do whatever you like with them, another thing to add is a piece of pea pod, gives it some color along with a little flavor that offsets the sweet scallop.

          No seasoning, bacon does all of it, plus if they're on the smoker, it will have a nice smokey flavor !

          The WC gets pierecd by the tooth pick, gotta be careful because they like to split.

          I had them on the smoker at 250º or so for 30 minutes or so, just cook them until the bacon it done. You can do them under your oven broiler just make sure you use a broiling pan or the fat from the bacon could catch fire.

            Love scallops. In any form. Bake or grilled. I'll shove you out of the way to get to them. Lol.

                  I'm liking this! Definitely going to give this a try . I may add a drop of sesame oil to the water chestnuts and I can't smoke bacon without some MH getting on them lol. That's the beauty of this place. Ideas a plenty !!
