  • Restaurant is dark today so a few things at home...

    Third attempt at bulk sausage. Used the 5/16th plate this time and made a mild Italian with a mixture Marjoram, Rosemary, Thyme, Sage, Basil & Oregano
    3.5 lb pork butt I picked up for .99 per/lb. Ended up with 3# after I trimmed some of the fat and removed the little bone that was left. Used 1TBS per lb of the Italian mixture. Fry test.. Little shrinkage.. Good taste. My guess is Mrs Cav is gonna think it's a bit strong. Soaked a bag of Pinto Beans overnight and this morning added some of the trimmed fat and bone from the butt alnog with Cumin, Allspice, Peppercorns, Red Sea Salt, Bay Leaves, Oregano, Minced Garlic, Celery, Carrots and Onion. When it finished and the beans were tender added a can of diced tomatoes. Gonna serve over rice with chicken breasts that are currently sitting in the MH Poultry Brine. Those are going into the oven with some EVOO, Sea Salt and CBP. Also picked up an 8.5# butt for next Sunday's Daytona Race (pulled pork) more on that later...

    It's only noon. Time for a cold Iron...

      Yeah.. We're closed Sunday and Monday. The wife is off on Sunday so today is my me time.

          Local place called AJ's Restaurant and Lounge. Been around for 27 yrs. Generally prep and cook lunch Tues - Thurs and dinners Fri and Sat

              Looks good! Just dunked a yardbord in some brine as well, rolled to smoker to the sun to get some free heat up...

                Thanks Zip.. It's actually more than one Arn by now.. Mrs Cav asked that I leave the grills alone today.. No big since next for Sunday's race it's all about me the grills pulled pork and wings.

                  One of my favorite things is when I can get some "me time"..doesn't happen all that often, but when I do, I will spend most of it cooking something. Gotta give you on yours, everything looks great.
                  Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                  My best asset however is the inspiration from the members on this forum.

                    Warm iron works better on clothes.... Guessing cold iron is beer? Sounds like a nice mellow day. Enjoy.

                        Beans did turn out to be pretty tasty Becky. One of these days I'll get a DO and do them up right..

                        Managed one messed up plated pic. Had a red and yellow pepper to those got roasted with EVOO and a peppercorn medley.
                        Not a bad meal for stuff just laying around the kitchen and pantry

                          I would love to fix a big pot in one my of DOs but the other half is not so big on that kind of beans.
