  • Today's Chili

    Knew we had snow on the way so last night took a bag of kidney beans and a half bag of pinto beans. Let them soak over night with a couple of bay leaves and oregano.

    This morning I put the sauce together. Here's the players.

    Crushed the tomatoes and added a can of beer and a couple of cups of water



    Added these spices
    1/2 TBS Cumin
    1 Tsp Allspice
    1/2 Tsp Cayenne
    2 TBS Chili Powder
    1 TBS Hot Hungarian Paprika
    1 Tsp Garlic Powder
    1/4 Cup Brown Sugar



    Half a chopped sweet onion, half a green pepper and 4 of Rich's smoked peppers went into the sauce.



    Browned 1/2 lb of course salt and pepper sausage with a pound and a half of venison. Tossed in the mini sweet peppers and seasoned with MHGP.



    Added the meat to the sauce and let it cook down for a few hours. Just a little taste for now

            That looks fantastic Cav! I love beans in my chili. When I was a kid we used to crush up saltine crackers in it. Total goodness. Thanks for sharing your recipe.
