  • Jaba jaba good !!!!

Loved the taste and flavor from my cook earlier this month. That chucky and beefy ribs came from a good / 'spensive meat shop.
Monday I still had that chucky on my mind. The local big m . Way different meat there I've had ground chuck from there that swallowed a whole pack of taco seasoning and needed another just so it tasted like taco meat

Any who , grabbed a 2" thick chuck ( roast / steak ? ) Added some tanoka dust , MHGP , and a little montreal seasoning and stuck it into the fridge for a few days. Lo and Behold my shipment og MH JAB showed up Wed
First try with it so I put some on the old milk cow chucky in the fridge and gave it an overnite rest. Wanted this one pulled , the last was great cubed but pulled is what I wanted.
    So :

This went back into the fridge.

came outta the fridge like this

    crap missing a pic. brb.
ok , RO lump with cherry in the V

Little too much smoke early but settled down to some nice thin blue quicky

No pics till the next day

Ended up with dang good shredded beef !!!! I've done chuckies from this store enough to know that unless you pressure cook it for an hour or two it don't get this tender or flavorful
My first go with the MH JAB
Seemed to draw the flavors in as well as take a potential workboot retread to very very good !!!

Wife likes colors and such so I did some peppers and onions for her. Me , I just let the jabajaba meat make me smile as I was eating

I am pleased you enjoyed it Phil I’ll be using it in a comp coming up end of next month... I’m that confident in it :{)

There is a slight acidic content to it..perhaps accounting for your tenderizing observation? It has no added tenderizers however. Nor any beef flavor..as many seem to think?

That just makes me want to run and get a chucky! In fact, I just might.

I'm sure the long cook ,over-nite rest and re-heat in the juices , did most of the tenderizing. But the flavors did seem to work their way through the meat a little deeper that most of my attempts .
Will be sure to try some things in side by side tests so I get a better feel for just what the JAB does
So far I like it !!!
