I'm new here. I'm going to smoke a 5 1/2 lb brisket on my new Mastercraft electric smoker. Yes I suppose electric is cheating but I got tired of the constant babysitting of my old and very small side heat box smoker. I'm a bit nervous as we have company coming. How long should I smoke the 5 1/2 lb brisket and should I wrap it at some point? Any advise would be greatly appreciated? Thanks.

Bear's step by step should help you out. In response to your question "how long should you smoke it", well, the answer is until it is done. If you don't have a meat thermometer you'll want to get one real soon. For most smokes, "how long" is measured by temperature, not time.
