  • Smoked Chicken Burrito with a Jalapeno Lime Ranch Sauce

    Burrito was in order for the night, so here is what we have going on:

    Smoked chicken
    Bacon
    Swiss cheese
    Tomatoes
    Lettuce
    Fried jalapenos
    Jalapeņo ranch lime sauce (1/2 cup ranch, 1/2 lime juice, 1 Tablespoon dried jalapeno powder)

    Heating up the chicken with a bit of left over bacon drippings:


    Putting together:


    All finished:


    This was a hit at my house! These where eaten up and plates licked!!

          Yep, I could pound down a couple of those.

          Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
          My best asset however is the inspiration from the members on this forum.

                The sauce did pack some heat and flavor!! My daughter thought it was a tad bit to hot... but I did catch her taking cleaning her plate!!

                      On it.. has long as I can avoid the hail that it to fall this afternoon.... burgers have been requested... not sure if it will be gas or charcoal...

                              now, as someone once told me, mexican food is all about the way the tortilla is folded.

                              What you have in that picture - any brit would tell you - is a chicken kebab with mixed salad.
                              That would usually be on a naan, but virtually identical to your picture.

                              So did you Fold your burrito ?
