This is my way. Very clean way to cut. Untouched by human hands.
Also no waste.

the local foodmart had mangoes on sale last week. I love mangoes. So I bought me a half dozen or so with the intents of dehydrating them. I pretty much used Alton's method to peel them, but have you ever tried slicing them thin? ugh. Slippery little bastards for sure! I ended up using the mandolin to, very slowly, slice them nice and thin and even. Still was a holy mess and not something I relish doing again anytime soon, but I have enough dried mango to last a while now :)Mike
