  • Beef Rib Benedict

    I haven't posted in awhile. Please feel free to delete this if it's in the wrong place..
    One of those finger food n beer nights. I slathered some beef ribs with bacon drippin's, seasoned with my smoked salt, pepper, garlic blend..



    Into the drum til done..

    added a few wings towards the end of the cook...



    the wings were seasoned with a beef pho base..













    Couldn't resist a pinch of the rib bark...





    Beef ribs n beer for supper that night...




    Next day...made a batch of Indian fry bread...





    chipotle hollandaise...






    Started my benedict build...
    Fry bread...
    heated rib meat...
    egg...














    Drizzled with chipotle hollandaise and sprinkled with a bit more chipotle seasoning..

    Added two hatch chiles... rolled in catfish cornmeal seasoning and fried til golden..




    Topped with crisp fried onions, a bit of cilantro and called er good.










    I really loved it. The fried chiles go well with eggs too..



    Will make this again in the future.

              So true!! Lately I've been going the chipotle, hatch chile route...the frybread really adds a lot. imo.
              I'm getting a ton of eggs from my hens and ducks right now... been eating a lot of breakfast meals for supper. :)
