I loved that show! Did anyone pick up on when he went from handling raw chicken right to adding the rest of his ingredients. No gloves. No hand wash. Butt, I guess that food sanitation back then wasn't quite what it is today...Butt hay, no one died from that show (that I know of)...
And yes, that is a dark-assed roux... and it IS guuud!
Great find Ken!
never seen or heard of the show but dang entertaining! love that roux!!!!
might not be following todays sanitation methods but then again that wasnt today and he aint got todays production line meat either...
Seen that...but then again... all the stuff he touched went into the pot for cooking. I'm OK with it. Now wipe the damned pot handles and lid knob tho, and right to the sink for a cleaning of all the various containers, etc.
Well put Rich.
I just keep thinking about how good that gumbo prolly is, homegrown range chicken, cooked with the bones still in the pot, allowed to set untill the next day before serving, sheesh...
Dat Roux guud be, I Garooontee! With jus a lil sip of wiiiiine.
That would be my Dad's Roux.
Mark has that accent down pat in typing at least, french, creole, coon ass, whatever the combo is. Gotta try and make your Dad proud and try and come up with a pretty roux like that!

you got that right...wow do it all the time.
loved Justin. I used to hand write all his recipes while watching his shows in the 70s. Later we acquired a couple of his books. His Jambalaya recipe is the main one we use still today.
In the evenings we used to listen to WWL new Orleans on the radio just waiting on them to play a Justin Wilson story.

Loved him too! But do any of you remember that he had tapes of, (I don't know whether to call it comedian or story teller), out there as well? My favorite uncle, who is a truck driver, asked if we wanted to hear some of his stuff that he listened to all the time on the road. We said sure, so he came to our motel room when we were at a family reunion, and a good time was had by all! He was not only a good Cajun cook, but a good Cajun story teller as well!
