    Had some extra time and for some reason got a hankering for some kielbasa couple days ago. Since the temps here have been cooling down a bit decided to do some sausage.

    20 lbs of pork & beef later this is what we have. 32-36mm casings - These were some great casings to work with. Smoked with cherry for aboooutt 5 hours or so if I remember correctly. Finished in the SV machine - I didn't package them first just chucked them in the water bath, then into the freezer and back out to package (keeps the shape a bit better when frozen with the vac sealer)

    Then cooked up a quick 1 pot meal: kielbasa, shrimp, rice, mixed veggies and some shrooms. Now this sticks to your ribs!

              Outstanding post! Everything looks fantastic.


              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.

                    A recipe to me is a starting point. I most always tweak... adding, subtracting. Unless it's tried and true, then I don't mess with it.

                            Very Nice! I'd have a helping or 5 of that dinner.

                            Funny story, that was the first thing I ever tried to smoke. I screwed up so bad, no TBS, white, probably didn't let it go long enough but since I screwed up the smoke, it didn't matter. Sat down to try my first smoked meal and pretty much about puked. I sat there and really wondered what all this smoking deal is all about.
