  • Just a Lil Puerco Pibil...

    Finally got round to fixing up some Puerco Pibil, hadn't had any in quite a while.
    Here's some of the ingredients... Boneless pork butt, cumin, allspice, cloves, annatto/achiote seeds, lemonade & a couple of habaneros. Not shown is black pepper corns, salt, vinegar, garlic & tequila...


    Mixed all the goodies together & let it marinade for a day or so. I then fired up the Horizon & put the marinated pork to the smoke for aboot three hours or so...


    Into the slow cooker for aboot five hours...


    Served it up on a bed of rice topped off with some smoked cheddar & a nice IPA...


    The recipe called for orange juice bhut all I had was frozen lemonade. It added a hint of sweetness bhut wasn't overpowering. All in all, very tasty...

          dunno why you'd ruin it with rice
          But meat sure looks interesting

          Is it just me, or does anyone else think allspice tastes exactly the same as cloves ?

              Allspice has a definite clove taste, butt not exclusively... Here's what I have gathered:

              Ground Allspice. Derived from the dried, unripe berries of the pimento tree, allspice delivers the flavours of many different spices including cloves, nutmeg, cinnamon and pepper. Before being crushed down, allspice seeds resemble dark brown peppercorns.
              Sure do like it, in moderation...

                            The leftovers have been yummy as well... Had to force myself to freeze up the last of it for future use...

                              Love it! I usually get the achiote paste (it comes in a brick and it's what's available around here)...does grinding the annatto at home make a difference?

                              If you haven't had the red onion escabeche with this...I recommend!
